Instant Pudding Ice Cream
Does anyone have a good recipe for ice cream that uses instant pudding mix, Cold Stone style?
ive been interested in trying it ever since i heard that this was one of the things they do to make their ice cream at Cold Stone, but havent been able to find a good recipe for it yet.
this is specifically what i'm referring to:
i am pretty sure they are extra flavors that they have in addition to their normal chocolate, banana, vanilla, and such flavors. It was also on Unique Eats a few days ago and the "Flavormaster" for Cold Stone said they literally put Instant Jell-O into it. i'm mostly wondering if anyone has a ratio they might have tried that worked out!

I tried sticking instant pudding in the ice cream maker just for kicks with the kids and it didn't freeze. I have a unit with a built in compressor, so I suspect it was the modified food starch in the instant pudding.
Cold Stone doesn't use any modified food starch. Here is their ingredient statement:
CREAM, NONFAT MILK, MILK, WHEY, SUGAR, CORN SYRUP, GUAR GUM, CELLULOSE GUM,
CARRAGEENAN, MONO & DIGLYCERIDES, POLYSORBATE 80, AND ANNATTO EXTRACT
They use large amounts of stabilizers (guar gum, cellulose gum, carrageenan), which gives it the chewy texture that doesn't melt when they mix it. I happen to loath the texture, but others love it. I do use some stabilizers from time to time when making my frozen treats.
What is it about Cold Stone's ice cream that is appealing to you, and maybe then we can help you find a recipe that mimics that.
I don't have an ice cream maker, and so have no recipes to offer. But my suggestion would be to do a search for frozen custard recipes- that's the real deal.
It's a longtime popular thing in western upstate NY, now being served to rave reviews at a little place in Manhattan called (I think) the Shake Shack.
