I've used and like the recipe for Oaxacan chorizo from the Culinary Institute of America, lots of good recipes both here and from other Mexican regions

JungMann and I are on the same wavelength:

I've been meaning to try a green chorizo recipe and came across this one:
I haven't checked, but it might be similar to one from Diana Kennedy.

I just used Google to find the second one, and ....
the first one is My own!

Search Chow for previous topics on Mexican style chorizo and why you should avoid the commercial versions; there might be other recipes there. For a Google example, search 'site:chow.com mexican chorizo' without the quotes.

How do you make yours? I marinate ground shoulder with ground ancho, pasillas, coriander, cumin, cinnamon, cloves, garlic, oregano and cider vinegar. I'll also add a little ground habanero if I want it extra spicy.
