Best fish with Mushroom soup
i would like to make a creamy mushroom soup tonight with chantrells and mixed mushrooms. I want to serve a nice piece of fish, with crispy skin along side. What do you recommend as the best fish? What about the right type of white wine?
My choice would be red snapper fillets with a Pinot Grigio.
Perhaps a few sauteed chanterelle mushrooms topping the fillets.
I might deglaze the pan with a bit of the Pinot, add the chantrelles, remove the chantrelles and strain the remaining fond and top the fillets with the chantrelles with the sauce.
