Best fish with Mushroom soup

i would like to make a creamy mushroom soup tonight with chantrells and mixed mushrooms. I want to serve a nice piece of fish, with crispy skin along side. What do you recommend as the best fish? What about the right type of white wine?

    My choice would be red snapper fillets with a Pinot Grigio.
    Perhaps a few sauteed chanterelle mushrooms topping the fillets.
    I might deglaze the pan with a bit of the Pinot, add the chantrelles, remove the chantrelles and strain the remaining fond and top the fillets with the chantrelles with the sauce.

      That seems so heavy for most seafood, but I do think scallops are lovely with mushrooms. Maybe trout? The sauce could be rustic, and so is trout.

        Trout was my first thought. Perhaps lightly floured and seared in a bit of bacon grease with not much more than salt and lemon pepper to season. Maybe a sprinkling of almonds for crunch. Pair with a pinot gris or a robust sparkler.
