Organic Pho (Soup) Restaurants (which use grass-fed/pastured meats)

Greetings,

Does anyone know of places that serve Pho containing (at least partially) organic/local/sustainable ingredients? I'm mainly interested in properly raised meat such as grass fed beef. So far I have found The Slanted Door which uses Prather Ranch beef, but the Pho itself allegedly isn't authentic.

    Turtle Tower claims to use free-range, cage-free chickens....

    I think My Father's Kitchen does; but I was less than impressed with their other offerings...didn't try the pho

      I didn't like My Father's Kitchen's pho, their broth was too light for my taste. Even for Northern style. Turtle Tower's is much better.

        I actually liked My Father's Kitchen pho ga. I was sick at the time and it was really comforting, clean tasting, and healthful tasting. Also not laden with salt/msg. I also enjoyed the spring rolls, though they were a bit non traditional as the dipping sauce definitely had light coconut milk mixed in it. The rolls themselves were traditional, including nice tender pork slices and lots of fresh herbs.

        My not-sick dining companions had the pho ga, and both versions of the pork bun (meatballs and sliced?). We thought everything was delicious, though certainly not the most traditional versions of the dishes. We also ordered several cups of blue bottle coffee and mighty leaf tea. I would definitely return and try out more of the menu.

          Completely agree with Dezzer. Even for Northern style pho, the My Father's Kitchen broth is way too light and lacks complexity and flavor. I was not impressed at all. I've been twice and have tried both the pho ga and the pho bo. I'm clinically addicted to pho and was very excited to try this pho after Bauer's positive comments in the Chronicle. Not so much.

        The Pho at the Academy Café was pretty good and satisfied my craving but was nothing to write home about. It was with chicken instead of beef, so this may be why.

          Update! Interestingly, I stumbled upon the Academy Café while planning a visit to the Academy of Sciences in Golden Gate Park and they have an organic/local/sustainable philosophy, and they serve Pho! I'll report back...

            Pot de Pho just closed recently, which was one option. Some pho houses used beef from local farms but apparently there's been a crackdown on those transactions.

              I've been wondering the same thing myself, but I doubt that there will be any that's why I've just ordered some grass fed beef bones and a bottom round cut to try to make it myself!
