Vegetarian in Kansas City?

I will be visiting from Boston on business for a few days next week and would love to know of any good vegetarian/vegan restaurants around. If not, I would be grateful for suggestions of places with more than the one token vegetarian entree. Some searching has yielded Bluebird Bistro - any thoughts? Also, it seems there may be quite an Ethiopian presence - if so, a recommendation of a place with really good tej (honey wine) would be great!

Not too pricey (less than $20/entree) and suitable for solo dining would be preferred. I will have a car and will be making trips around the greater KS City area.

Thanks in advance!

Blue Bird and fud for sure. look up Eden Alley also - it's great and in the Country Club Plaza area whwere there's lots of shopping and neat architecture. Ethiopian - Blue Nile, they serve a homemade Ethiopian wine (Berze?).

There are also many restaurants that offer one or more vegetarian or vegan options, and most aren't an afterthought, but are popular even with meat eaters. One that immediately comes to mind is the veggie burger at Room 39, served with some seriously delicious fries for only $7 at lunch. http://www.rm39.com/ The menu changes frequently, as they source locally a lot. Breakfast and lunch are a good deal, and they have excellent coffee and espresso.

I've also heard good buzz about Cafe Seed, but haven't been yet. A friend raved about the "B"LT sandwich, but local tomatoes are out of season now, so I don't know that it's a good choice year round. http://www.360kc.com/Restaurants/Vege...
