flavor of cilantro kept in water

I bought cilantro 9 days ago and used some in a recipe. I placed the remaining cilantro in a glass with water and a plastic bag on top. I noticed that when I used it today (it looked reasonably healthy), it seemed to have lost 90% of its flavor. What is happening?

Typical of cilantro, it loses flavor over a short time, even though it still looks fresh. Try to use it within 2-3 days at the most.

Btw, I don't think your storage method has anything to do with cilantro flavor loss, but I keep mine wrapped in a damp paper towel, in a ziploc bag and use it up quickly.
