On Monday nights, Dovetail does a 3 course vegetable tasting menu (one with a vegetarian option and another with vegetables as the main influence with certain options having meat/fish as well):

Kajitsu is a fairly new restaurant that serves shojin cuisine, which does not use meat and fish.
Scarpetta also introduced a vegetarian menu a few months ago; while it's not a tasting menu per se, they could probably create one for you.
