Quirky Turkeys

Hi there!

The CHOW kitchen is putting together our favorite quirky turkeys for Thanksgiving. We're curious: what is your alternative to plain old turkey?

    There's a sort of deconstructed turkey breast roast in From Julia Child's Kitchen that I've made several times and people like a lot. You bone a breast, slice it, stuff it between the slices, reform it, wrap it in cheesecloth, braise it, and make sauce from the braising liquid. Very nice.

      Turkey roulade, stuffed with a spinach/pistachio/reggiano/proscuitto forcemeat, crusted with herbs and barbequed. Although a very special memory is the year my parents chucked it all, made enormous turkey sandwiches and a great picnic and took us to the drive-in instead of participating in the usual extended family drama.

        Thanks, mamachef, for your response. Funny, we are featuring a turchetta recipe for Thanksgiving, which is a turkey roulade with porchetta spices. It's a big project to debone and skin the bird but so delicious. I like the idea of switching things up with a turkey sandwich and a drive-in. Change is good.
