Does anyone know where I can find pig's cheeks - not smoked, not cured, not pickled - fresh or frozen, anywhere in the Twin Cities? If someone knows of a good mail-order option, I'm up for that too.
I got some from my Duroc pork rep a couple weeks ago, they were pretty nice and meaty. I don't know where you would find them retail, but they are out there. Maybe they could send you some if you contacted them online. Compart Duroc, from MN/IA.
Seems like something Clancy's should be able to get for you. Or maybe the new Heartland farm to market store. Or maybe check with the France 44 cheese shop as I have seen head cheese in their shop before.
