Recipe for coconut cream pie?

If any of you have had the coconut cream pie at Scaramouche, in Toronto, that's what I'm talking about... Light as a cloud, the perfect blend of sweet with some texture from coconut....... yummmmmmmmmmmmmmmm

That is most indeedy a "yummmmm" pie. I don't have a recipe, but part of the key to Scaramouche's pie is the massive amounts of lightly sweetened whipped cream on top of the custard. If I recall correctly, it's at least 2 to 3 inches of pure whipped cream, which definitely adds to the "light as a cloud" experience.

Haven't had that pie, but the most fabulous c cream pie ive ever eaten is from the Dahlia Lounge in Seattle. Coconut in the crust, a couple different kinds in the pie, loads of whipped cream and some more shaved coconut on top. Google it :)

Oh yes, Tom Douglas's coconut cream pie is amazing! I tried my hand at making it once for a potluck and while I didn't think it lived up to the Dahlia bakery version, it was still a popular selection. On a whim, I replaced one of the cups of milk with coconut milk instead; it came out extremely decadent and coconut-y.
