Tabbouleh with couscous?

Can you make tabbouleh with couscous instead of bulghur? Aren't they almost identical?

Anyone have a good recipe, or can point me to one?

    They're not identical at all - bulgur is a grain, while couscous is a pasta. That said, I find that there are a lot of recipes in which you can use bulgur, couscous, quinoa, or farro - and they work! Each is different, but they tend to go well with the same flavors.

      Bulgur is a far better nutritional choice than coucous, but if that is not a concern, the latter will be suitable.

        During last month's COTM (The New Book of Middle Eastern Food- Claudia Roden) , I discovered a tabbouleh-like couscous salad. Equal amounts of couscous and water are mixed and left to soak for 20 minutes. To the couscous one adds a dressing of lemon and olive oil, then chopped parsley, mint , cilantro, tomatoes, cucumbers,olives and salt. Let the mixture rest for 30 minutes.

          You could certainly make couscous with tabbouleh ingredients. I don't see any reason it would taste bad. Whether you can call it tabbouleh or not is a different question :-P
