Preferred brands of dried shrimp

What brand of dried shrimp do you buy for thai recipes? I'm looking for dried shrimp that are not woody and are without food coloring or too many preservatives. Is it correct that the bright orange dried shrimp have food coloring? Does shrimp size correlate to being softer?
