we had an amazing cheese at providence this weekend - it was described as being made from water buffalo who are only fed bitter greens like radicchio and arugula - and it tasted exactly like bitter greens! heaven on their walnut bread and with a dab of apple compote. it was pure white, oozing and soft like an epoisse, spooned out of the rind which was swathed in linen cloth. i have scoured the internet to no avail. of course i could call the restaurant, but the hunt is much more fun.

You might want to consider calling them and asking.

Do you think it might have been a Burrata? See:

Burrata isn't part of their cheese course.

        Maybe it's a casatica di bufala? I'm at a loss. :-)

I'll be interested to learn where on earth water buffalo graze on radicchio and arugula.

            Um, Lake Como, perhaps??

Or maybe they are like the Kobe cattle that are hand fed beer & massaged without leaving their pens. But in Italy, not Japan.
