help me name a cheese i had at providence!

we had an amazing cheese at providence this weekend - it was described as being made from water buffalo who are only fed bitter greens like radicchio and arugula - and it tasted exactly like bitter greens! heaven on their walnut bread and with a dab of apple compote. it was pure white, oozing and soft like an epoisse, spooned out of the rind which was swathed in linen cloth. i have scoured the internet to no avail. of course i could call the restaurant, but the hunt is much more fun.

  1. I'll be interested to learn where on earth water buffalo graze on radicchio and arugula.

      Um, Lake Como, perhaps??

      Or maybe they are like the Kobe cattle that are hand fed beer & massaged without leaving their pens. But in Italy, not Japan.
