Leftover Chocolate?! (I know! right?!)

I have chocolate leftover from a chocolate fountain we used over the weekend. The chocolate has been melted and now is in a semi-firm state like ganache. Any ideas on how to store? Any ideas of goodies to make since we have holidays coming? We already ate ourselves sick spreading it on fruit and I still have about 3 lbs. left!

    You could suck it down in foodsaver bags in 1/2 pound packages. Put all but one in the freezer. Put the one left in the fridge.

    I'm a little concerned about the "semi-firm" state it is in. If it didn't harden, you probably won't be able to use it as a dip and expect it to reharden. You could use it for any other recipe though. It would make a great genache, frosting, hot fudge sauce, souffle,etc,etc,etc.....

      One idea I've used in the past is a gingersnap truffle. Make or buy some very snappy, crisp gingersnaps, crush into fine crumbs and incorporate into the chocolate enough to make a firm ball about 1" in diameter. Roll in cocoa, or more crumbs, or toasted chopped almonds. Freezes well. Nice to keep around for hostess gifts, holidays, etc.

        You could make ganache and freeze it. Or make truffles for the holidays, or hot fudge sauce to be jarred and given out as presents.

          Pipe it into the center of yellow cake cupcakes.

          Or if you want to make shortbread, another variation- a thin layer of apricot jam or orange marmalade on one side of the cookie and a thin layer of chocolate on the other side. Smushed together, it makes for a delicious filling.

            You could bake some shortbread cookies, then use the chocolate to make sandwich cookies.
