Smoke me a hog!
Hi everyone. I live up in NYC but my fiance and I are getting married down in Atlanta in November (she's from Gainesville, GA). We're having our rehearsal dinner/bbq on Lake Lanier. I'm looking around for someone I can hire to roast a whole pig for 100 people on site. I'd rather not do a full catering service, just someone that can responsibly cook and cut for us. The rest will be picked up at the store or made at home. Does anyone have a suggestion as to who I should call?
I've been to a couple of events and talked to the guys at Five Star BBQ (www.fivestarbarbecue.com). They run the same kind of smoker that I do and have one sized to hold a whole hog. Don't know how psyched they'd be to do just that in terms of time/cost to do it versus the fee for just the pig.
You could also check out the Stump's Smokers forum and see if anyone on there in the ATL or Gainesville area would be interested.
I'm forgetting the name, maybe Milt or someone who knows will remind the world, but there's a Q joint in Gainesville (Hickory Pig?) that ATL Magazine thought was the best in the region. Maybe they'd do it.
Thanks Ted. I called the Hickory Pig, the owner actually recommended a competition pit-master friend of his but it's not going to work out. We're probably just going to go the way of a mixed bag of bbq to please the masses. This is not the end of me and a pig though. It will be done one day.
