I am planning a dinner party/business dinner for guest that only eat fish. I am thinking about BBQ shrimp w/garlic & butter ,rice pilaf, fresh green beans, and salad. Since my husband does not eat fish I have no experience buying or preparing. Can you please suggest if I should by farm raised, or fresh. What kind of shrimp do I buy, how many do I serve? Does this menu sound good ?
Thanks a bunch.

You say your husband doesn't eat fish but does he eat shellfish? If not, is there not anything else these guests eat? Your menu sounds fine. IMO, wild caught shrimp is best but if you can't get those, farm raised will work..they need to be fresh. Buy the large shrimp (16-20 per pound) and serve 8-10 per person or if you could find U10 sized shrimp, you'll need about 3-4 per per person

Here's some info on shrimp; here they indicate that large shrimp is 31-35 per pound but this size is not large: http://www.cookingfishmonger.com/shri...

If you can't get fresh shrimp and have to settle for the Indonesian farmed variety, you may want to consider a quick 20-30 min brine in a mild salt solution. It will give the limp imported shrimp some body and snap when you bite it.
