Aquitaine has had a chicken dish with sauce chasseur on their menu from time to time.

chef, you are most likely to find sauce chasseur, one of the classic french sauces, in a trad french restnt:, served over beef. Brasserie Jo, chez jacky, sandrine etc.......Hungry I?.

I don't know the answer, but if you're trying to find out via Google etc. you'll have more luck with "chasseur".

there's gotta be a sauce recipe, or at the very least, a longwinded sauce description, buried in the Canterbury Tales somewhere

I just looked it up...http://www.epicurious.com/tools/foodd..., sounds delicious and easy to make. I'm sure a lot of restaurants serve it, they just don't seem to call it that anymore.

Haven't seen it in an age. P.S. it's sauce chasseur (hunter) in case you try to search for it online. JoJo

I could only guess, but maybe Anthony's Pier 4.

I see they have a "mushroom sauce" available at AP4. It's probably close. You might also try Cafe Escadrille in Burlington.
