What to do with Red Beans (Azuki beans)

I was given a bag of red beans, the type you find in asian groceries to make chinese/japanese deserts. I believe they are called azuki beans.

I really love red bean deserts like mochi or those drinks with red beans at the bottom or desert soups.... But i don't know what to do with them!

Anybody know a simple recipe that wouldn't require me buying too many ingredients, and make me enjoy these?

A savory recipe is osekihan. A holiday (celebratory) dish made with mochigome and the azuki beans. If you make the sweetened beans, the dorayaki (pancake) is great (see yumyumyumyum's link), so is an pan (bun filled with the sweetened beans- a quick cheat would be to use biscuit dough. fill and steam), or eat on top of ice cream or to fill a swiss roll.

I think you could make red bean pancakes with stuff you'd have in the pantry.

Boil them with sugar and eat hot or cold. Add mochi if you have some, or can make some. You could also freeze that and make red bean popsicles. You can add orange peels but I prefer it w/out.

Add mochi? I thought mochi was the actual treat, made from some glutinous rice paste or something. Have you made this before?

Got a recipe for red bean popsickles? I guess i'd have to make icecream with it. That's not so bad since i have a ice cream maker... Just need s recipe.

I've tried making mochi but it's easier to buy it already made. For as little as I use, I rarely go through a whole bag of glutinous rice flour. I like to add little balls of it to the red bean dessert.

I don't use a recipe for the red bean popsicles but I just boil red beans in water and sugar to taste. Let it cool and then put in popsicle makers.

use them anywhere you'd use other red beans or pinto beans...soup, bean salad, sausage & kale, refried beans, casserole, beans & rice...
