Bought "Veal Cubes" from local farm - how long to cook?

I purchased a package of veal labeled "Veal Cubes" from a local farm. It doesn't say what cut they are from. So my question is without knowing what they are, how long should I cook them. I am wondering if they will be OK in a quick stew cooking for 30-45 minutes, or will they need a couple hours to be tender? Any suggestions? Recipe ideas? I was thinking of doing them german style in a cream based sauce over spaetzle.....???

  1. Yes, that does sound like a package of veal stew meat. Dredge the pieces in seasoned flour then after browning the meat, remove it, sautee your aromatics, add the meat back (with juices) and all your other ingredients. I should think a simmer of about 1 hour - 1 1/2 hours should do it.

      Agree; I made veal stew on Monday in the same manner except I added chicken stock, tomato juice, sofrito seasoning, onions, garlic, carrots & potatoes. I started a simmer on the stove then popped into the oven for an hour then turned off oven & let it stay in oven for another over with residual heat. Perfectly delicous.
