I want gourmet/artisan pickled sausage.

I don't want to feel guilty about eating this treat anymore. Spicy, vinegary, pickled sausages I get at the local store are divine. However they made from mystery meat and probably contain red dye etc. Also maybe some genius person who makes them would do other flavors, other then "OW my tongue!"

  1. Thats a good topic and I am definitely still searching for a quality recipe. I have made pickled sausages from some all beef or all pork smoked sausages before and my friends seem to like them. I like to use Franks Hot Sauce as the spice. They are definitely better quality than store bought ones but I would like to improve on it. I was thinking maybe free range sausages with low sodium vinegar instead. I don't know how it would taste nor how long it would keep though. That may get a bit expensive as well.
