stuffed pork loin

Am going to stuff a pork loin tonight with some goat cheese, granny smiths, confit of leek, and bacon and was wondering what other things people stuff their pork loins with.

    I like minced apples and some butter, salt, onions, plenty of thyme and some bread crumbs to hold it all together. Then after I tie up the roast I rub the whole thing all over with molasses and then sprinkle on the salt. This sounds cloyingly sweet but it's not and makes the most lucious crust! The apples and thyme taste beautiful together.

      Do you saute the filling together first and then stuff or do you just mix the ingredients together, stuff and then bake? (and how long / temp do you bake it at?)

      A couple of years ago, I stuffed a pork loin roast with chopped fresh figs, toasted pine nuts, feta cheese and basil, with a bit of honey, then grilled it. It was very good - I love pork + fruit, and a little cheese tossed in just makes it a sure winner for me.

        My sister did a thing with two slabs of pork ribs enclosing a bread stuffing that was heavy on the apples and onions. I remember it fondly.

          I like spinach, mushroom, onion, garlic & sun dried tomato. If the loin doesn't have a nice layer of fat on top I'll wrap it in bacon.

            I used Italian sausage, sauteed onions, mushrooms, and peppers (I like poblano peppers) and grated parmagian cheese.

              I've used cornbread stuffing with apple, onion and sausage, but as much as I like that my favorite was finely-chopped mushrooms, onions and bacon cooked in butter, very small cubes of stale bread, and just enough stock to moisten it and make it all stick together. Heavy on the seasoning, too. Cooked that for the in-laws back in Dad's declining years and it was very well received.

                agreed! and Mariacarmen, yours sounds great too! I've also done minced dried apricots with some apricot jam and minced shallots

                  I also use dried minced apricots, but mixed with cornbread stuffing.

                  that sounds seriously yummy - how did it turn out? i haven't done this, but I would imagine a blue cheese/spinach/pine nut combo would be good, maybe with golden raisins or dried cranberries.
