I-30 between Dallas and Texarkana ; I-20 between Dallas and Shreveport
We're taking a drive between Dallas and Lake Village, Arkansas. The plan is to go out on I-30, and back on I-20 (or vice versa). So looking for suggestions. (The other half of this question, I'm posting on the Central South board here: http://chowhound.chow.com/topics/736684)
I found many great suggestions on a search of the board -- especially from littleman (many thanks!) -- but I have a couple of questions:
First, which of these on our list are especially great (worthy of making a special stop for)? We'll probably only stop for one real meal each way and want to make it count.
Second, which are most typical of local specialties, especially things we can't get in Dallas or in the North? ** The asterisks seem like strong contenders at the moment.

If you are missing Wyatt's Cafeteria, Bryce’s would be good. The only caveat, the ambiance was really reminiscent of a stereotypical southern experience.
Texas Roadhouse, if it's the chain, is consistently decent.
if you eat somewhere off of I-20, make sure you save some room for desert with a quick stop in Canton. right off the freeway in the back of Baker's Ribs, is The Original Pie Company.
they are original from OK but have really good fried pies and a wide variety.
We ate at a Jalapeno Tree restaurant not too long ago in Athens, Tx and liked the fajitas real well. They have locations all over east Texas. Good margaritas too :-)
In Canton we really loved the Dairy Palace on 19, right off of I-20. Great burgers and cheap!! Next trip to Canton, we are going there again.
Texas Roadhouse is very good. I always get the 8 oz filet and it is wonderful. The caesar salad is delicious as is their baked sweet potato. My husband loves their burgers. Their prices are reasonable.
