Bologna - if you could only go to 1 place for dinner

I am travelling through Bologna in the Spring and only have 1 night in the city. I want some suggestions on the single best place to eat in Bologna. I am open to either a famous place or an out of the way lesser known place. I just love real authentic food, price is not an issue.

My experience is limited, having spent only four days there, but our best meal (a bit pricey but not extreme) was at Al Pappagallo. The food is wonderful, service polished, and atmosphere elegant but not stuffy.
