Chateau Bastor-Lamontagne Sauternes 2000

Have this bottle which I need to drink. Eldest child purchased it when in Paris at age of 16. Please let me know what in the world I should serve with it. I know it is a dessert wine, so I am thinking blue cheese and pears. Any help would be more than appreciated.

  1. Blue cheese and pears, yes, but not just any blue: genuine Roquefort to fully understand the genius of the pairing.

    Simple desserts with a caramel or yellow/white fruit component are another possibility: crème brûlée with a tuile or lange de chat cookie (or leave out the burned cream and serve the cookies by themselves); apple tarts, especially tarte Tatin; barely sweetened peach cobbler; pear clafoutis; etc.

    Foie gras, preferably seared and served with not-very-sweet accompaniments, or "en terrine" with something like an apple compote or membrillo on the side.

    General rule: if serving something sweet, make sure it's not sweeter than the wine.
