If all you want are dumplings, then Kingdom of Dumplings on Taraval will satisfy that very well, from the boiled kind (many varieties) to xiaolongbao which there are fans for it even though it is not a Shanghainese place. The noodle soups have a more subtle flavor but overall it's pretty much MSG free. King of Noodles (isn't that their sister restaurant?) seems to also do hand pulled noodles, although I haven't been yet.
San Tung on the other hand only has one kind of boiled dumpling to my knowledge and maybe two? kinds of steamed dumplings. Like sfbing said, quite MSG heavy if you get anything that involves stir fry or deep fried, otherwise I don't have MSG issues with the boiled dumplings or 5 spice beef noodle soup at San Tung (might be a little bit in the noodle soup bowl but not horrible in any way).

Thanks sfbing! We enjoyed a fantastic meal at Beijing restaurant. We all felt that we'd come back and try all new dishes each visit so we could widen our experience and -- maybe -- learn something as we experiment. Again, thanks.
We are also going to try the other places in my original post as well as K K's suggestions.
