What kind of Chinese food do you want?

Cantonese (seafood, casseroles, noodles, soup?), Sichuan, Shanghaiese, Americanized Chinese? Are you looking for a specific item like fried dumplings, hand-pulled noodles, soup dumplings, roast pork/duck, claypot rice, dim sum, etc.?
