Hong Kong breakfast
My fave place for a real American breakfast near where you're staying is Main St Deli at the Langham Hotel in Tsimshatsui. It serves NY-Jewish (not kosher tho) food during lunch/dinner, but also has an all-day breakfast menu from 10am, running the gamut from pancakes, French toasts, waffles, eggs, bacon, to breakfast burritos. Nathan road is one LONG road!! Anyways, scattered along its length are HK style cafes that serve 'pseudo-style' western breakfast such as bacon/ham/sausages with eggs, toasts ( try them with coconut 'gaiyan' jam, very aromatic! ), hash brown...etc. However, you could also give rice-congee with fried dough and stirred fried egg noodles....a try?! There are also 'Shanghainese' style breakfast serving soya bean milk, scallion pancakes, dumplings etc.
