Best Banh Beo?

I've always wondered what all of those little dishes were when I was at Vietnamese restaurants and now (i think) I know.

Any recs on where to go for this in Seattle?

I think Lemongrass has it.

Tamarind tree has it.
It is a central vietnamese dish from Hue. Their used to be a Hue style vietnamese restaurant in the same strip mall as Lemongrass and seven star. Not sure if it is still there but they would have it.

One of my favorite vietnamese dishes. If you ever get to Orange county, get to Quan Hy or Quan Hop, those are the best Banh Beo's I have had stateside.

Is Van Loi new?

I’m not sure when Van Loi opened. It is largely a catering/take out business serving the Vietnamese community. Its hours reflect this, opening at 7 am on Monday – Wednesday and 6 am Thursday – Sunday, and closing everyday at 7 pm. There are tables, however, for eating there.
