Advice - poor quality squash
I bought a kabocha squash today at the farmer's market. I was a little surprised to see one so early, but I had seen something about how 'fall produce' was starting to reach the markets, and I had a few squash recipes I wanted to try, so I bought it!
I cut it open and it's... well, it's not orange. It's not very sweet, either. In fact, it's very bland. I baked it and pureed it for my recipe (I was hoping to make squash ravioli) hoping it would taste better cooked - but it doesn't. Was it just too early for this squash to have been harvested? Why would a farmer harvest and bring to market something that wasn't ready?
What do I do with this squash now that I have it? :( Half is still raw and uncut - I'd hate to just waste it, but it's just so bland and flavorless.
Maybe I can pickle it? And what should I do with the puree? I really wanted to make the ravioli - but that seems like an awful waste of effort.
