Help with dinner tonight - chicken legs!
Due to a hectic week, my planned meals for the week have been all screwed up. I have some pinto beans cooking with mexican flavors, and also have some chicken legs and wings I need to use up....what can I do with them quickly without much prep? I have some avacados, limes, spices, garlic, sour cream, cilantro, etc...as well that I would like to use? I don't cook with legs very often....Any suggestions would be great!
maybe too late to help you, but... salt and pepper your chicken, rub some of your spices on (cumin, oregano are good mexican flavors),sautee some onions, then sautee the chicken in the same pan with the onions, then at the end add the minced garlic and saute for a minute. add a little chicken broth (or water if you don't have any) and squeeze the lime into the pan and let them cook through on the stovetop on low heat. taste your "broth" for seasoning. when they're done, serve with dollops of sour cream and sliced avocado alongside, and if you have them, heat up tortillas.
Season legs with salt and pepper and bake in a 450 oven for 45 to 50 minutes or until they reach 165. Gives you that nice crisp skin.
Toss your avocado with some sour cream, juice on one lime, 1 tsp. ground cumin, finely minced garlic and salt and pepper to taste, then mash together for a quick guacamole. Serve in tortillas if you have them with fresh tomatoes and thin slices of onion too. Also, a bag of tortilla chips works great too. You could even layer the guac with the chicken (pulled from the bones) and the beans (and if you have some canned or fresh salsa) for a quick layered dip.
