Saturday Night Dinner on the Strip

One lavish dinner in Vegas, what would you recommend? We are a couple looking for a delicious swanky but not overly posh dinner to remember on Saturday night. Considering Cut or Craftsteak for steakhouse options, any other good ones? I have heard Ferraro's is good but not sure how old school that choice would be. I am looking for good food and perhaps sultry atmosphere--but nothing over the top, e.g. Mix was horribly underwhelming on our last visit.

Just returned from three nights in Vegas.
Had a great meal at SW in the Wynn.
Great Steaks, and excellent sides.
Impressive wine list.
Also dined at Bouchon at the Palazzo/Venetian.
Fun place, great food, Bistro authentic.

We went to Bartolotta at The Wynn recently and it was very good. If you like Italian and seafood, I highly recommend it.
