What to order at Regalade St-Honore and Chez Denise?

Welcome your suggestions on their best dishes....

All the dishes have been named by everyone.
    I can only add:
At La Régalade, they manage to make a foie gras that seems light.
    Veal shank very good.
rice pudding good but not as good as the CAJ template.
DCM says it all re chez Denise.
Lastly, just order what you feel like. Have your own experience. Bon appétit.

        Great suggestions!
My French is very good, but I'll admit the gastronomic lexicon sometimes has me stumped!
Can you describe the hachis parmentier and the cotes du boeuf?

Cotes du boeuf there is a Flintstone rib steak on bone served with a bunch of marrow bones and a ton of french fries. Hachis parmentier is the french translation in name and style of Shepherd's Pie.

What, no Steak Tartare? or the baba a rhum?

Steak tartare is listed, under entrees as we order one for the table and the 100 CD pak sized disc will serve the table easily. Find their Baba too rum dependent and l am not a rum kind of guy. Would make a poor pirate.

At La Regalade, I enjoyed the langoustine soup, the wild mushrooms with poached egg and, for dessert, the rice pudding as well as the vanilla custard with raspberries. My daughter had a fish with squid ink risotto which was only ok, and my husband had braised veal (I think) which was fine but not my favorite. (Although it's a 3-course menu, I chose two "entrees" and a dessert.)
