Anyone have recommendations for professional sharpening of high-quality kitchen knives? I know Davis Cookware offers a service but I'm a little wary of how professional it might or might not be. Any experience using them, or any other recommendations? I'm tempted to use a well-reviewed mail-order service rather than take a chance on an unknown ...

I have a Mac and I get it sharpened at Davis Kid....it's $4 I believe? I've had no problems with their services.
