We were wondering if Kent was going to be agile enough to react to the new economy, adjust the menu and turn the restaurant into a neighborhood spot or keep it as a special night out, high dollar-fine dining establishment.
When Raymond rolled out his new menu it became clear that the food was still going to be at the peak of the Austin area as far as quality and inventiveness goes but it remained expensive.
Rumor has it that Chef Tatum is working on a new project: a little joint celebrating the common hog with a pork centric menu using everything from the nose to the tail.
Let's hope the crew all land on their feet.
It will be interesting to see what opens up in the old Red Wolf Saloon.
