Calling all 1-lb Breadmakers: share your recipes please
Hello,
I recently purchased a Zojirushi mini (1-lb) breadmaker, which I absolutely LOVE. I had previously written off bread machines, but now using this high-quality machine, I realize that a good breadmaker can make delicious bread. But I have one problem: I don't have enough recipes. I can't find any decent recipes online (or even in the books I've seen) for the 1-lb. machines and I'm a bit nervous (and incompetent at math LOL) to try and work out the ratio to adjust larger recipes (plus, in the books that I do have, which shows recipes for 2-lb and 1.5-lb, they are not equally scaled down in proportion).
So, I'm looking for either 1-lb. recipes that you have/found or tried-and-true recipes that you have scaled down for your 1-lb. machine and have personally enjoyed. I hope this hasn't already been posted, but I couldn't find exactly what I was looking for. Recommendations for books with 1-lb. recipes are great, but posting an actual recipe is even better :)
Thanks so much!

I just purchased the Mini also. Simple recipes is full of recipes where the author uses her Mini to knead the dough. There are many pictures too.

I just posted two 1 lb. white bread recipes, one of them using a water roux. I don't know if they'd be useful to you, however. The loaves were made with a slow-rise dough and baked at a VERY low temperature of 250F. I'm not sure if breadmakers can bake that low. There were some additional preparations that might be difficult to translate to a breadmaker.
I LOVE these breads, especially the water roux loaf. Here's the link if you're interested:

All the recipes in the book Bread Machine Magic by Linda Rehberg and Lois Conway are scaled for 1, 1-1/2, and 2 lb. bread machines. This is where I get most of the recipes I use with my 1 lb. Zojirushi. My favorite is the basic whole wheat bread. It's enriched with egg and milk, and has a little bit of honey, so it's soft and sweet enough to be the standard sandwich bread in our house.
Despite the book, I am definitely getting a "standard" sized machine next time!

you might find this helpful, though not a "recipe", but it is king arthur flour's FAQs, and it has some helpful ratios. http://www.kingarthurflour.com/tips/b...
