De Buyer: Mineral B Element
I was ready to make a purchase of a set of mineral pans, but then I saw a new type of mineral pans on De Buyer's site called Mineral B Element. Anyone heard anything about this other than what's out on the site?
(from the site)
MINERAL B ELEMENT pan: iron is a 100% natural mineral material
Improved nonstick qualities
Organic beeswax-based protective finish
Guaranteed without any coating (PFOA and PTFE free guaranteed)
No chemicals added - Environment safe production
Ecological, recyclable, and good for the environment
Health : Iron molecules from the pan contribute to good health
Allows for high heat which seals quickly keeping vitamins and nutrients in food
Cooking qualities : High temperature= perfect for SEALING, BROWNING and GRILLING
Seasoning : the more the pan is used, the better the performance
The darker it becomes the better it is for natural nonstick properties.
This seems to be marketing bollocks. Beeswax-based protective finish? On what? The handle? Take out that line about beeswax line and maybe the one about anti-oxidation (rust?) protection and the rest of that description applies to any other carbon steel pan made by De Buyer.
Other than the finish, I can't tell any difference between my De Buyer Mineral pan and my De Buyer Carbone Plus pan.
I purchased the mineral 9.5", 2.5mm crepe pan, followed the instructions to boil water with potato skins for 15 minutes, cleaned with hot water and dried, added oil and brought up to temperature, dumped oil, wiped clean,...anyways..i was turning out crepes like i'v been doing them for years, the pan after 20 or so crepes is getting nice and dark,NOTHING STUCK!!!..Perfection!,i used a bit of butter just for the first crepe, the rest i just wiped the pan with a paper towel between crepes..i know it's just a piece of iron but while cooking and realizing nothing is sticking and the crepes are coming out wonderful it is an impressive pan,i'm not hungry now but it's so much fun that i feel like making more.
I bought a 12 inch fry pan of this type and it works perfectly--easy to season, food fries without sticking...the statement above is accurate: Seasoning : the more the pan is used, the better the performance .The darker it becomes the better it is for natural nonstick properties.
