Looking for "SS" Brand Japanese Blue Carbon Steel Pans

  • 2

Hi just wondering if anyone knows where to buy some "SS" brand frying pans (or other SS brand products, for that matter). I live in San Diego, and just by chance was in a restaurant supply store, specializing in Asian cookware. I just happen to spot a "SS" frying pan, and bought it. It was a 26cm diameter frying pan, made of 2.3mm thick blue carbon steel, and a metal "v" shaped riveted handle. And it was about $20.00 and some change. After cleaning and seasoning, it is virtually non-stick, which I prefer to call "stick resistant". I am after a larger pan about a 30-34cm pan.

The problem is that the restaurant supply store's supplier is out of business now. They have not been able to find another supplier for these pans. So does anyone know of another place where they are sold? I have a few French carbon steel pans, Matfers and de Buyer, and I find that they are somewhat expensive and often a bit too heavy. (relatively speaking, the French pans are expensive, but I know they will last for several generations if taken care of, but even with abuse they are pretty solid).

For those of you unfamiliar with the brand...here is one website which is comparing the brand with other pans/tempura fryers. It also has a neat way to season the pan, more in line with how to season a wok actually. Sorry the website is in Japanese, but you can put the web address in the google search and then hit "translate this page" option. Note; the translation is very literal and often very funny, so be prepared for a laugh or two.

(Note: yes there is no dot after the www)

Thanks in advance.

Hi kc72, Thanks, I will give them a call. We love going there, if fact a trip to SF is not complete without going there, and also Sanko around the corner. Perhaps if they don't carry it, they might be able to order it. I will also try to ask the "wok shop" to see if they have it as well. As I know Tane has the 30cm wok. Thanks again.
