Asian version of Insalato di Riso?

asiansupper Sep 9, 2010 06:30 AM

Had Italian rice salad for the first time and thought it was simple and delicious. It had tomatoes, tuna, chunks of fresh mozzarella, rice al dente and some other veggies. Thought I could make an Asian version of it... any ideas?

Here is what I am thinking:
Chopped chinese green (picked up some tat soi for the first time - would this be good? Maybe fresh?)
Slightly salted cucumber
Deep fried onions
Fish sauce + lemon juice + salt + pepper + broth?

If you are looking for something traditional, you might want to look into Burmese Rice Salad (Tamin Thoke).

A Japanese version is chirashi sushi - here's a site, but go ahead and google it - there are many luscious variations: http://www.globalgourmet.com/food/kgk...

        Make chinese fried rice.

        Let cool to room temp.

Voila ... Asian Insalato di Riso
