Returning to Memphis after 20 years, what restaurants offer healthiest, freshest local ingredients?

I need a few recommendations for good, healthier restaurants for an upcoming trip. Where do the locavores or slow foodies go out who really care about what they eat?

    I think Flight meets your requirements for fine dining. I also think McEwen's has very fresh, healthy food that's fine dining for lunch or dinner. And Chef English at Restaurant Iris is known for his fresh, healthy menu. He was recently featured in Men's Health. I would also include Majestic Grill for fresh, healthy food for fine dining for lunch or dinner. And I would include The Beauty Shop Restaurant for fresh, healthy fine dining for lunch or dinner.
