Best subs used to be at Momesso. As for Philly cheesesteak, if you find a place here that makes a decent one, please let me know!

As of last Wednesday, Momesso still makes an excellent steak sub, with cheese, but I agree it's not the same thing as a Philly cheesesteak -- the steak is not sliced as thin, and there are more vegetables, but it really is a great sandwich.

My favourite submarine is from Manzo PIzzeria in LaSalle. Homemade bread and plentiful, flavourful fillings.
We've had extensive discussions on philly cheesesteak here and the conclusion was that you cannot really find it in Montreal: http://chowhound.chow.com/topics/505278
