Thomas Keller's Fried Chicken...Wings?

I'm a BIG fan of chicken wings and wanted to try TK's fried chicken recipe with them. Is there any reason I should *not* use just chicken wings for this? I know the cooking time will be shorter, but anything else I should do differently?

ETA: I also know brining time will be shorter as well.

  1. The only problem I could foresee is having a poor meat to coating ratio. That being said, I don't see any real reason why you couldn't make wings with Keller's fried chicken recipe, there's just going be a bit of trial and error to get your proportions and timing right.
