Crispy Pork Shoulder Confit - Wood Tavern

Had a new dish (at least for us) at Wood Tavern last night -- the Crispy Pork Shoulder Confit over Creamy Parmesan Polenta. All I can say is wow. Wow. This is not for those timid of fat, flavor, or, well, fat, but it was the standout of the night (on a menu of winners) and my new favorite dish at Wood Tavern. Fork-tender, with a crisp outer crust, the pork was melt-in-your-mouth and melded perfectly with the creamy polenta. Topped with a handful of favas and carrots and a bit of pork jus, it was just perfect. Go get it now.

  1. Was it like pulled pork or carnitas or completely different? Confit sorta gives it an illusion of something grander. It does sound good however...but anything with pig fat usually does.
