Tried and True (and pretty authentic) Sacher Torte Recipe
I tried my hand at making a Sacher Torte from a Wolfgang Puck recipe the other night only to see my cake rise and then spectacularly fall after I took it out of the oven. Followed the recipe exactly. I have some theories as to why it fell, but it was a first for me that is for sure.
Has anyone had a good run with an easy to follow, tried and true Sacher Torte recipe? I want to make one for a good friend of mine who really likes them but hasn't had them in awhile. I'm good with the ganache/coating and the preserve spread. The cake is where I had issues and I only have two 8x2 round pans. Despite the mention above, if you care to post the recipe, please include the preserves and the chocolate covering as well.

FWIW: I tried the one from Epicurious a few years ago. My son requested I make one after his return from a semester in Germany. It was very good. But both my son and his professor who has been taking groups of students to Germany for years said it was very good but not quite authentic. You will notice it is sometimes spelled as one word, so that might help in your search.
