Brewing beer, curing meat, or making cheese? Get great advice

Anyone know where I can get my hands on some Tasso around the Richardson/N. Dallas area? Wanting to make Prudhomme's jambalaya ....

I know Ava in Rockwall makes it for their dishes. If I really wanted the ingredient I might be tempted to call Randall Copeland and ask to buy what I needed.

      Central stocks it.

Gracias. I was told by a friend that they didn't have it, but his reliability is questionable on these things ...

It may be dependent on which CM you go to. The one in Southlake hasn't had it when I've looked. If by chance, you can't find it there, Bayou Market in Lewisville has it. Maybe further than you care to drive, but it is one of their standard freezer items.

I would agree with CocoaNut that bayoumarket is a great place to purchase your cajun supplies from. They are a bit hard to find, but worth the trip. If you are just making a quick sauce stop at central, if you are doing more make the trip to Lewisville.

I know that Plano Central has it in stock. It's by the Deli in the pre-packaged section.
