Kasper's Meat Market in Weimar
Stopped Thursday and picked up some of the beef pork mix sausage everyone raves about. It's very good. I zapped some Thursday night and put in a tortilla. The casing was extremely tough. Couldn't chew it hardly. But the sausage was delicious. Friday night I cut some in coin sized pieces and fried them on the stove and the casing was much more manageable.
The surprise here though is the boudin. It was very good. Nice spice but not over spiced. I made boudin biscuits with it on Friday night. I usually like about 50-50 rice and meat but this had hardly any rice.
No web site, this is an old fashioned meat market. Not much has changed there in decades I'd bet. Address and phone number is at the link below. You'll have to call for the hours, I forgot to ask when I was there. It's about 3-4 minutes off of I-10.
