Dinner suggestions for before traveling
What do you make for dinner the night before an early flight and when you don't want any leftovers because you will be away for more than a week? The last home cooked meal should be a satisfying one ;-)
If I didn't have to eat the leftovers to clean out the refrigerator, I would make a steak, baked potato and a green vegetable, just enough for each person.
I make "leftover" soup and an omelet with cheese, ham or bits of whatever vegetable is left in fridge. Usually there are ingredients for some kind of salad. If there is any soup left I freeze it. [Leftover soup - put cooked vegetables, cooked meat, cooked chicken, cooked rice in pot with water to cover. Add tomato paste mixed with curry powder. Cook for an hour or so. Put through food mill. Serve. A chef gave me this recipe years ago and it can be quite good depending on leftovers.]
