Backpacking--No Fire--Tasty Eats

I'm going on a 2 1/2 day backpacking trip in the Desolation Wilderness up near Tahoe. We can't have fires, and I would hate to just eat sandwiches for dinner, so I was wondering if anyone has any tips for tasty food that will keep at cool temps (it won't be too hot) for a day of backpacking and then be delicious that night.

There are the usual suspects: pasta salad with cheese in it, etc. etc. I was thinking of something fun with meat in it though--wouldn't the Middle East be a good guide (thousands of years of nomadic culture and tasty meat pies, etc.)?

I was thinking some sort of nicely spiced lamb meat pie with rice in it, but what does everyone think?
