Thanks for the suggestions! We had an early dinner at the Famished Frog on Saturday, which worked out very well with a small child.
Unfortunately, I didn't get to Raul's for an empanada on this trip. But we did get ice cream at South Street Creamery for dessert.
On Sunday morning, we hit the road and had a good breakfast at the Union Plaza Diner in Union, since it was on the way to our final destination.

Assuming you'll still be with child <grin>, you can go to Jersey Boys Bagels or Time for A Bagel (a block further east) on South Street just off the Green...or I'm betting Copeland @ the Westin (outside of 'downtown' Morristown proper) does brunch, but that'll be more upscale...and/or if you haven't been to Raul's yet, he has breakfast empanadas, iirc!
Just don't go to the Morristown Diner. PLEASE. If you do want to go to a diner, you'll have to travel a bit--if you're willing to do so, there's the Brookside in Whippany.

Famished Frog should work for you...it's just off the Green. Food is fine; think Houlihan's kind of stuff, but at least it's not coming out of a corporate factory.
Another option would be Raul's Empanadas, which is down the hill from the Green--but there's no table service, and sometimes the wait is a bit long (they fry 'em fresh). They're GREAT, though.
Steer clear of the Morristown Diner (or whatever it's now called). UGH.
