I love the beans and veggies at Lalibela and other Ethiopean restos, but have no idea what oil, stock etc, they're cooked with -- anybody know?

Generally, ethopian dishes start with a spice / butter mixture called kibbeh.
If you want vegan ethiopian food, try M&B Yummy. They are vegetarian and possibly have vegan options.
M&B is about 90% vegan iirc.

Have you tried asking the restaurant? They would actually be the only ones to know since they cook the food.
