salmon rillettes: too much salmon and no lox

i am planning to use a fusion of two recipes. one that calls for .5 lb salmon and .5 lb lox. husband picked up too much salmon and no lox. do you think this will turn out ok with all salmon, no lox and maybe some extra mascarpone?
(one recipe calls for mascarpone and olive oil, the other butter and olive oil)
