salmon rillettes: too much salmon and no lox

i am planning to use a fusion of two recipes. one that calls for .5 lb salmon and .5 lb lox. husband picked up too much salmon and no lox. do you think this will turn out ok with all salmon, no lox and maybe some extra mascarpone?

(one recipe calls for mascarpone and olive oil, the other butter and olive oil)

Why not make lox with part of the salmon. Brine the salmon in salt and sugar, dry and cold smoke.

Maybe I'm missing something here, but with the sparse information provided there is no way to provide any response, i.e. we have no idea what the recipes are, so cannot comment.
